Mmmmm... this bread is more like cake! It's easy...it's delicious... and it's healthy! Zany Zucchini Bread comes straight from The Supernatural Kids Cookbook by Nancy Mehagian. Here's what you'll need...

- preheated over at 325 degrees

- 2 eggs

- 1/2 cup vegetable oil

- 1 cup raw sugar

- 1 cup grated zucchini

- 1 teaspoon vanilla extract

- 1 1/2 cups whole wheat flour

- 1/2 teaspoon salt

- 1/4 teaspoon baking powder

- 1/2 teaspoon baking soda

- 1 teaspoon cinnamon

- 1/2 cup chopped walnuts

 

Beat your eggs in a mixing bowl. Add oil, sugar, zucchini and vanilla and beat further. Add all the dry ingredients (flour, salt, baking powder, baking soda, cinnamon and nuts) and mix well with a spoon. Pour your new mixture into a greased loaf pan and bake for 50-60 minutes or until a tooth pick comes out clean. These 50-60 minutes are a perfect opportunity to teach your little one about zucchini - how it belongs to the squash family, how although it's considered a vegetable it's also botanically known as an immature fruit, or how a zucchini has more potassium than a banana! Let the bread cool before cutting it or removing from pan. And then .....ENJOY!
