Nancy Mehagian has introduced us to this delicious dessert in The Supernatural Kids Cookbook. Clafouti (pronounced like claw-foodie) is a french dessert usually made with cherries. Don't be discouraged by it's fancy name because it is so easy and tasty to make! Cherries aren't a prerequisite, you can interchange any fresh fruit that strokes your fancy or happens to be in season. You'll feel like a Parisian chef after this baking frenzy. Try it over this holiday weekend... 

 

Here's what you'll need...

2 tablespoons butter

1 cup mixed berries

1/2 cup whole wheat flour

1/2 cup raw sugar

1/4 teaspoon cinnamon

1/3 teaspoon salt

4 eggs

1 cup milk

1 teaspoon vanilla extract

400 degree preheated oven


Melt the butter in a skillet and spread the berries evenly over the bottom. Mix the flour, sugar, cinnamon and salt in a bowl. In another bowl, beat together the eggs, milk, and vanilla extract. Slowly blend the wet mixture to the dry mixture bit by bit. Mix well until the batter is smooth with no lumps. Pour the patter over the fruit in the skillet and place in the oven. Bake for 20 minutes and serve warm with vanilla ice cream or whipped cream.
