You may have noticed a trend emerging in most of our Tasty Tuesdays...fun and healthy twists on classic recipes! We love the idea of taking simple, classic recipes that everyone and their moms knows how to make and adding healthier ingredients or just presenting it in a fun, new way! For example, the Omelet Muffin! Everyone loves omelets and muffins, but what about an omelet muffin? We think you will love them even more! This is a perfect recipe for an on-the-go breakfast for you and the kids or for the morning after all the neighborhood kids spent the night at your house! It's unbelievable easy but exceptionally awesome!
Here's what you will need...
paper muffin liners
8 eggs
1/2 pound cooked meat of your choice
2 cups diced vegetable of your choice
1/4 Tsp salt
1/8 Tsp ground pepper
Preheat oven to 350 degrees. Grease muffin pan or line with paper muffin liners. Beat eggs in large mixing bowl and add all the yummy ingredients! Pour mixture into muffin cups, bake for 18-20 minutes...and you're done! We told you it was easy!
