Soup is something the whole family can enjoy. With winter nearly two day away, it will surely warm the family on these cold days and nights ahead. It's not complicated and when all the flavors come together, the end product will be deliciousness on your stovetop. So grab your apron, your biggest pot and let's get started...

Here's what you'll need...

2 cups lentils

8 cups chicken broth (or vegetable broth)

1 large onion, chopped

1 carrot, diced

2 stalks celery, chopped

2 gloved garlic, minced

1 leek, chopped

1 can tomato paste

1 teaspoon dried thyme

1/2 teaspoon ground cumin

1 teaspoon kosher salt

1/2 teaspoon black pepper

Combine the lentils, chicken broth, onion, carrot, celery, garlic, leeks and tomato paste in a large heavy pot and bring to a boil. Lower the heat, cover and simmer for 45 minutes. Stir occasionally. Add thyme , cumin, salt and pepper and simmer for 15 more minutes. Serve warm!
