Did you guys know April in California has many citrus fruits in season? One of them happens to be lemons, so grab those in season from the store and let's make these tasty Lemon Squares that the kiddies will love! This recipe is adapted from a cookbook called The Little Big Cookbook for Moms by Alice Wong and Natasha Tabori Fried - make sure to visit their site by clicking here. For now, get out the aprons and lemons and let's get started...

 

Here's what you'll need...

for the crust

3 1/2 cups all purpose flower

1/4 cup confectioners sugar

1/4 teaspoon salt

1 3/4 unsalted butter, cut into pieces

for the filling

6 large eggs

3 cups gradulated sugar

2 tablespoons finely grated lemon zest

3/4 cup freshly squeezed lemon juice

2/3 cup all-purpose flour

1 teaspoon bakng powder

preheated oven at 350 degrees

 

For crust, sift toger the flour, confectioners sugar and salt in a large bowl, Cut the butter into the flour mixture until us has a lumpy cinsistency. Press the dough in a 15x10x2 inch pan and back for 20 minutes, Let cool for a while,

For the filling, beat the effs until blended and gentky beat in the granulated sugar, lemon zest, lemon juice, flour and baking powder in the order listed. Blend until smooth. Pour the mixture over the cooled crust and return to the oven for another 25 minutes. Cool and cut carefully into 2 inchsquares. Don't forget to dust with confectioners sugar just before serving. Now, just enjoy!
