An episode of 'Giada at Home' was on and when we saw this halibut recipe we had to try it out! We always like to bring healthy options to the dinner table and what better than a light fish recipe?! Let's just say.... not only is it extremely simple, but incredibly delicious.

 

Here are a few facts to get you on the halibut bandwagon.... 

  • Halibut is one of the largest saltwater fish
  • Halibut is a rich source of the omega-3 essential fats, a form of essential fatty acids in which the standard American diet is sorely deficient.
  • Halibut is also a good source of vitamin B12 and vitamin B6.

 

Bring this healthy meal to the table tonight for dinner - you won't regret it. So, wash your hands, grab your apron and let's get started....

 

Here's what you'll need...

2 tablespoon chopped chives

2 tablespoon chopped italian parsley

4 six ounce halibut fillets

1 cup arugula

1/4 cup olive oil

1/4 cup capers, rinsed and drained

2 tablespoon lemon juice

1 teaspoon red pepper flakes

lemon zest

preheat oven at 375 degrees


First, mix the chives, parsley and 1/2 lemon zest. Drizzle each fillet with olive oil and add a pinch of salt and pepper. Next place the herb mixture on each fillet and bake for 8-10 minutes. While the halibut is cooking it's time to make the salsa verde. In a food processor add the arugula, olive oil, capers, red pepper flakes, lemon juice and zest from the other 1/2 of the lemon. Pulse until you get the right consistency - we liked it a bit chunkier. Once your halibut is done baking - top with the salsa verde. Simple, easy and delicious.... Enjoy!
