Spinach is delicious and versatile, not to mention it is low in calories and a great source of vitamin C, vitamin A, and minerals, especially iron. You can make a salad with it or place it in a cooked recipe, which is why it's one the ingredients that is most abundant in our fridge. This also means sometimes there is a lot of spinach left over - so often times a quick garlic spinach sauté is answer - it's easy and simple. So grab your spinach and your apron.

 

Here's what you need....

10 ounces fresh spinach

2 cloves of garlic

2 tablespoon olive oil


First, rinse and dry the spinach. Chop up the spinach so it's not in large pieces. Grab your skillet and add the olive oil on medium heat. Stir in spinach - it will reduce fairly fast. Once the spinach is close to being fully reduced, add minced garlic. If you add the garlic too soon it will taste bitter. Now all you have to do is eat and enjoy.
