
Maca root has been revered for centuries as a superfood, filled with healing and energizing properties. It has an earthy, slightly bitter flavor that mixes so well with sweets! Try these maca buttons for a yummy energy boost.
What you'll need:
- 2 cups unbleached flour
- 1/2 cup powdered maca root
- 1/2 teaspoon baking soda
- 1/4 teaspoon sea salt
- 1 cup packed organic brown sugar
- 1/2 cup raw cane sugar
- 1 cup organic butter, softened
- 2 free range brown eggs
- 2 teaspoons vanilla extract
- 2 cups organic caramel chips
- A squeeze of agave nectar (for extra sweetness)
What to do:
Preheat oven to 300 degrees.
Combine flour, maca, soda, and salt in a medium bowl. Mix dry ingredients well with whisk and set aside.
In a large bowl with an electric mixer, blend sugars at medium speed. Add softened butter and mix to form a grainy paste, scraping down the sides of the bowl. Add eggs and vanilla extract, and mix at medium speed until just blended (do not overmix).
Add the flour mixture, caramel chips and agave. Blend at low speed until just mixed.
Drop dough by rounded tablespoonfuls onto ungreased cookie sheet, 2 inches apart. Bake for 12-15 minutes or until golden. (Careful, the maca in these makes them cook a bit faster, so keep a close watch towards the end of baking, to prevent burnt buttons)
Transfer immediately to a cool surface (or enjoy hot right out of the oven!)
