School may be out, but that means we are even more busy entertaining and chasing around our little ones! Here's an easy recipe for a great summer stew, using veggies and leftover chicken breast!

Cut up one whole red onion, and add olive oil in the bottom of a crock pot. After you caramelize the onions a bit, then add 2 quarts vegetable broth. Add a few spices to taste like cumin, parsley, garlic salt, etc. Prep all of your veggies into 1-2 inch pieces. Add the tougher veggies like carrots and potatoes first. An hour or two later, add celery. Take your already cooked chicken breast and shred it up into pieces. About 4 hours later (or whenever the carrots and potatoes are getting soft), add a whole bag of spinach and your cooked chicken shreds. Feel free to add tomato paste for a little bit of extra flavor. This is a great base for any variation of stew you'd like - It's also very easy to simply check back every so often when you are running around with the kids!
